Piperade
Piperade. Cut a small X into bottom of each tomato. Add the chiles, onion, and garlic.
A pipérade is a Basque dish made with tomatoes, peppers, Bayonne ham, and piment d'espelette.
The first time I ate pipérade was at a picnic for my second year university French class.
The eggs in the recipe are not mixed into the sauce. It is made of scrambled eggs ( oeufs brouillés) which are cooked with peppers, tomatoes and garlic. This dish is very quick and versatile, and hearty.
