Rougail
Rougail. Rougail is a common preparation in the island of Reunion, but also in Madagascar and Mauritius, made from sausages and a very aromatic sauce. This word, in the tamil language, means "green fruit" or "chili".
Since this recipe is passed down from generation to generation, there are quite a few variations of spice combinations: onions, garlic.
Add tomatoes, tomato sauce, and spices (turmeric, paprika, thyme, cumin, salt).
